Our Farm

Our farm is located at Banjar Batungsel Kelod, about 1 km from the small road next to SAI Villa at the main road Jalan Raya Pupuan. Currently, it is only accessible by motorcycles as the road is too narrow for cars. The farm is managed and maintained by Bu Komang, Pak Putu, Pak/Bu Nengah and family. We share the coffee yields in the harvest seasons equally.

Coffee harvest starts around June to the end of July and it is done in several rounds. The coffee cherries are all hand picked. We do selective red cherry picking in the first few rounds as the cherries are not ripen at the same time. Finally, strip picking is done in the last round of harvest to clean up all the cherries and then prune the trees to prevent an infestation of Coffee Berry Borer (CBB).

Before processing the red coffee cherries, we do pre-cleaning by doing hydraulic separation manually. The best red cherries undergo anaerobic fermentation, and then spread out in the trays for drying in the greenhouse. The rest of the cherries are spread out in the tarp for drying under the sun. After the cherries become dried pods (about 11% moisture content), we hull the pods to get the coffee green beans. This process is called the natural process which will result in a more fruity taste note in the coffee.
